If you have had a pannier come a drift it may not have been because you didn't lock it in properly. Take a look at this attachment.

Touch wood, I've never had an issue with the panniers on mine...

Me nether, in 13 years. I always check that the bottom is positioned correctly on the mount. I find that unless the top mounting positions are in place. I cannot turn the key to lock them in place.
