Hi Timbo,
Welcome to OzSTOC.
I'll get some pics of my Classic Industries tow hitch and post in a day or two.
In the meantime, here's some pics of a US made Unigo hitch I had previous (to the Classic). In my opinion it was superior in terms of quality and rigidity (didn't have as much movement).

I will do something like that except use the larger stronger bolts near the pillion foot pegs
Yes i was going to use the pannier support bolts as well for vertical load
