The spring compression ring is set at 30mm with another 45mm of thread showing so I'm sure you could set it to your liking.

Adam, It is dead easy.
1. Place the bike on centre stand
2. Remove right pannier
3. You have one bolt at the top and one at the bottom
4. place a piece of wood on the floor behind the wheel to act as fulcrum and use a long bar to adjust the height of the wheel/swingarm so as to not stress the bolt threads as you screw/unscrew (the wheel and swing arm can get heavy if you're not used to it)
5. Take for a ride, without panniers and adjust height every few kilometers until you reach your desired comfort level.

I would not remove the wheel for this as you have enough space to work in.
And what about the satisfaction that you did it yourself?

Adam, check out David Silver Spares from the UK for all st11 parts. I found that including postage, I paid less than half the oz cost.
