Sent from my fone so a bit cryptic.
In Melbourne on way to tasmainia boat.  30° and raining. Peak hour on m1. Traffic stopped for prang. Bike starts overheating. Get off m1 to let bike cool. GPS finds another route.  So with cool bike I'm away. Bike over heats again and GPS locks up. By now I am running out of time. Eventually I twigged radiator fan not working.  GPS locks up again. Dug out a piece of wire to short the temp switch.  Fan works so I left it running. Got going again.  GPS locks again. Found boat OK. Next day in Tassie got some coolant and topped up. Kept tabs on level since and not using any. So I hope I have not cooked it.
Also got a switch with leads to bypass senser. Can be reached on the go.  Remember to watch gauge.
So  after what was a near disaster we have had a wonderful trip.  No rain no traffic.  Good company.

Excellent outcome.  Amazing how things conspire against you- the GPS didn't have to join in the hassles!!
That pressure of finding the boat when you're not a Mexican is stressful- I know I was very pleased to see it after winding through Melbourne's arteries.
A good example of "know your bike".  I couldn't short my fan on the ST13 on the road like you did on your ST11.
I hope you love Tassie the way we all have when we visited there.  Even better to have great company to share it with.

Check it is not just low coolant. Yorkie and I both had the same. Bought new switches and found we had just lost coolant. Filled up again and old switch works fine. Might save you $100 odd for a new switch. If you do need, the are 2 here in WA ... lol ...

Low coolant can do that. Typical cures are trimming the overflow hose at the radiator to get the overflow container working properly (it will just fill up and the radiator becomes more empty), and replacing the radiator cap as the rubber seal can crack and not suck coolant back in when cooling down. Fan sensor can fail, but that is a more remote possibility. Failed thermostat can stick shut as well, but all the ones I have replaced tended to run cold stuck open.

 radiator cap was new. The fan switch had died causing the overheat. had used all fluid in overflow and more then 600ml from system
I topped up as soon as and had already shorted switch. next day i drained and replaced fluid and put in bypass switch. kept tabs on fluid in the next 2 weeks, means pulling panels off in motel and got some weird looks. took 1/3 of a cup once and 30ml now that i am home after nearly 5000k. Will have to keep tabs on it. tempted to cut piece out of right pie warmer panel to get at cap. i have a spare fan switch, just need time to do it

I found I can get cap off without needing to remove anything. Tight but doable if you just want to stick finger in to feel there is coolant up top. Helpful hint though ..... Wait until bike has cooled.
