Went to a custom bike show in Bathurst today, and was very surprised to see an ST (well at least an ST engine) there......

That would be the one at Blackheath I presume. It predates my membership a bit.
There was a local one years ago here that was powered by a Moto Guzzi LeMans 1000, but I'd reckon an ST motor would be perfect for power and torque.
